Indian cuisine in Canada was either too informal to be considered serious or too common to be recalled with great pleasure, and Signature grew out of this simple frustration. What wasn’t available when the founders arrived in Brampton was Indian food. It was Indian food that was treated like the French kitchen treats bouillabaisse, or the Japanese kitchen treats ramen.
